Haimoon Paahtimo roasts coffee twice a week. Orders placed by 8:00 am on Sunday are shipped fresh from the roastery on Tuesday, orders placed by 8:00 am on Wednesday are shipped on Friday. Hacienda La Claudina Tabi is a Colombian specialty coffee that combines sweet plummy notes, hints of raisin and a deep aftertaste of dried dates. The Natural process enhances the fruity, full-bodied character of the coffee. The coffee comes from the Hacienda La Claudina estate, located in the Ciudad Bolívar region of Antioquia, in the mountainous region of Colombia. The farm is owned by Juan Fernando Saldarriaga, a modern and progressive coffee producer known for his innovative methods. He combines traditional farming skills with carefully controlled processing methods. Hacienda La Claudina is Saldarriaga’s experimental farm, where varieties, fermentation times and drying techniques are tested with the aim of constantly improving the quality and flavour profile of the coffee. The coffee farm is also part of a wider vision of responsible, transparent and forward-looking coffee production.
Works well in a standard coffee machine, but reaches its full glory with manual filtration methods such as pour over, Aeropress and Chemex.
