The coffee comes from a small farmers’ organisation in the village of Monte Bonito, which has less than 1,000 inhabitants. Most of the organisation’s 89 farmers have very small plots of between one and three hectares.
The coffee is fermented for 16-18 hours, then washed and dried for 10-14 days.
