During the harvest Petrona makes sure the ripe cherries are picked and usually she needs to do three separate picking passes on the farm. The cherries are depulped right after the picking and fermented in plastic tubs for 36 hours. The coffee is washed until its free from mucilage and dried on a patio for six days.
