This exciting coffee is grown by Hilario Ccori from Cuzco, Peru. This is a medium roast coffee that tastes incredible as an espresso or filter coffee. In both methods, the coffee is fruity with a lively acidity reminiscent of grapes. For espresso, a short brewing time of around 20 seconds is recommended to achieve a pleasantly sweet, balanced and a lively acidity. Hilario’s coffees have the typical flavour of Cusco coffees. Cafetoria Roastery has visited her farm in Paucartambo, Peru, and found the farm in a hilly area 2000m above sea level, right on the Mapacho River. Hilario’s efforts to grow natural coffee varieties; Typica and Bourbon, which are disappearing due to climate change, are appreciated.
