El Desvelado coffee comes from Nariño, South-West Colombia close to the border of Ecuador. This coffee is a combination of two varieties that are assembled from the crops of multiple small farms. The farmers have sorted, processed and dried the coffees already at the farms. The finishing touches and sorting according to the quality has been done at the Growers Association. The supplier of this coffee works directly with the aforementioned association and has selected the coffees for this El Desvelado coffee according to the cupping scores.

The roaster’s recommendation is to let this coffee sit in the bag after the roasting approximately 10 days, if it is used as an espresso. During this resting period, the taste of the coffee has a chance to even out and the aromas come forth more clearly.
