The microclimate at the growing regions in Guatemala is combining the warm winds from Mexico and the cooler air of the Huehuetenango highlands. The cherries have time to ripen producing intensive flavours in the coffee. The Guatemala Finca Petaton is processed washed, after which, it has been fermented for 32 hours and dried on drying patios for 12 days.
