Guatemala El Cabro is a unique coffee due to how it was processed. The coffee berries are left on the coffee plants to dry, after which the berries are picked and their flesh is removed. Owing to this drying process, the coffee has a juicy jam-like quality. The roaster Antti Luukkonen from Kaffa Roastery chose this coffee to their selection when visiting the Finca La Bolsa farm in April 2017. The plantation is located in the mountain region of Huehuetenango a few kilometers from where the coffee is also processed.
