Pirkanmaan paahtimo orders are sent out fresh to customers once a week. Orders made by Monday midday will be sent on Wednesday. The standard delivery time in Finland is 2-4 working days.
The Dukamo family, who produce coffee, manage three coffee farms in the Sidamo area. Coffee grown at the Gatta farm is processed at the nearby Buncho washing station. Buncho stands for single origin bean. The coffee has a modern double fermented processing. After picking, the berries are passed into a water basin where once again the unfit berries are removed. The berries are lifted to dry and a resting period of about 24 hours begins. At the same time, the first pre-fermentation starts in the coffee bean. The coffee beans are crushed and the beans are then subjected to a second round of fermentation, lasting between 72 and 95 hours. The beans are rinsed with plenty of water and allowed to dry in the open air.
