Colombia El Placer Midnight Bloom – Pink Bourbon (Carbonic Maceration) is a coffee where a top Colombian producer and Haimoon Coffee Roastery meet. The story begins in Colombia, but ends in Haimoon and from there in your cup. Sebastian Ramírez is one of the world’s most respected coffee producers, and Midnight Bloom is one of his masterpieces. At Finca El Placer , 1744 MASL Calarcá, in the Quindío region, Sebastian combines traditional cultivation with precise, almost scientific processing. Sebastian Ramírez is a fourth-generation coffee farmer who has become one of the most followed producers in the world. His farm, Finca El Placer, located in Quindío, Colombia, acts as a kind of experimental laboratory where tradition meets modern science.

Sebastian doesn’t just grow coffee, he designs flavors. He is known for his extremely precise processing methods, such as carbonic maceration, which bring out unprecedented aromas in the coffee. His goal is sustainability and ensuring that the next generation can live with pride in coffee. Midnight Bloom is a perfect example of Sebastian’s philosophy: technically flawless, but emotionally stimulating in taste.

The name Midnight Bloom perfectly describes the feel of the coffee. As you grind the beans, the kitchen is filled with the scent of dark flowers. The floral lavender immediately stands out, with ripe berries and a soft chocolate undertone. This is a coffee that feels more like a relaxing evening than a busy morning routine.

Midnight Bloom’s character is created by the carbonic maceration method borrowed from winemaking. Only fully ripe cherries are picked by hand. They are then sealed in airtight tanks, to which carbon dioxide is added. The cherries ferment slowly in a cool place for up to 200 hours. Finally, the coffee is dried for about 20 days in elbas dryers until the moisture is just right. The result is a wildly aromatic and multidimensional specialty coffee.

Taste and mouthfeel

In the cup, lavender appears as a refined florality that floats on top of the berry notes. The taste is reminiscent of dark berries, such as blueberries, blackberries and a touch of cherry. These are balanced by a soft chocolaty note with dark chocolate and cocoa. The mouthfeel is silky and winey, with bright but round acids. The aftertaste lingers for a long time, and the lavender, berries and chocolate alternately emerge even after the last sip.
