Colombia Coconut Coferment – Limited Edition Filter Coffee of the Year 2025

This coffee is grown by Jairo Arcila on the Santa Mónica farm in Colombia. This coffee was subjected to a 72-hour dry anaerobic fermentation cycle with the coffee grounds on top. During this fermentation phase, coconut and wine yeast were added. The coffee berries were then pressed and placed to dry on raised beds with peaches until the ideal moisture content was reached.
This small batch is of the Pink Bourbon variety. This variety is currently being studied to determine its origin. It is believed to be a mutation that occurred at an altitude of 2100 metres in San Adolfo, Huila. This coffee has an 88.5 cupping score.
The coffee was awarded Espresso of the Year at the Helsinki Coffee Festival in 2025.
