Heimar Collazos represents the younger generation of coffee farmers from Acevedo, Colombia. In previous years, Pirkanmaan Paahtimo has featured coffee from his father, Luis Collazos.
Grown at an altitude of 1,750 metres, this coffee was hand-picked and semi-washed processed around the end of October and beginning of November 2025. In the semi-washed process, the coffee cherries are mechanically depulped after picking, leaving some of the sugar-rich mucilage layer attached to the beans. The remaining mucilage is removed later in the process, but has time to contribute additional sweetness to the coffee. Similar processing methods are also commonly referred to as pulped natural or honey process.
The result is an exceptionally smooth and sweet coffee with notes of ripe, juicy fruit, florals and light citrus. The cup leans towards a fuller-bodied character. The coffee shows its aromas especially well when brewed with manual filter methods.
